  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tablespoon taco seasoning Adjust to taste.
  • 1 cup shredded cheese (cheddar or Mexican blend) Melts well into the rice mixture.

Optional Toppings

  • Avocado Sliced or diced.
  • Sour cream To taste.
  • Salsa Choose your favorite type.
  • Chopped cilantro Fresh cilantro enhances flavor.
  • Lime wedges For squeezing over the dish.

Preparation

  • Gather all your ingredients.

Cooking

  • Heat a large skillet over medium heat.
  • Add the cooked rice, drained black beans, corn, and diced tomatoes into the skillet.
  • Sprinkle in the taco seasoning and stir everything together.
  • Allow the mixture to cook for about 5 to 7 minutes, stirring occasionally.
  • Turn off the heat and stir in the shredded cheese until melted.

Serving

  • Scoop the taco rice mixture into bowls or on plates.
  • Top off with your favorite toppings.
