  • 2 Tbsp taco seasoning The key to that classic taco flavor.
  • 1 (16 oz) can beans, drained (kidney or pinto) Provides added protein and fiber.
  • 1 cup corn (canned, fresh, or frozen) Adds sweetness and texture.
  • 1 ½ cups fresh diced tomatoes (about 1 lb) Offers freshness and acidity.
  • 2 cups beef broth Serves as the base of the soup, enriching flavor.

Instructions
 

Preparation

  • Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.
  • Add the lean ground beef, diced onion, and bell peppers. Cook until the beef is browned and the vegetables are softened (about 5-7 minutes). Drain any excess fat.
  • Add the minced garlic and taco seasoning. Cook for an additional minute until the garlic is fragrant.
  • Mix in the drained beans, corn, diced tomatoes, and beef broth. Bring the mixture to a boil.
  • Reduce heat to low, cover the pot, and let it simmer for about 15 minutes, stirring occasionally.
  • Taste the soup and adjust seasoning if necessary before serving.
  • Ladle the soup into bowls and serve warm.
