  • 1 package fresh or frozen ravioli (about 9 oz) Main component of the soup
  • 2 cups fresh spinach leaves Adds nutrition and color
  • ¼ cup fresh parsley, chopped For garnish and flavor
  • ¼ cup grated Parmesan cheese For serving

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
  • Stir in the minced garlic, diced carrot, zucchini, and red bell pepper. Cook for an additional 5-7 minutes, stirring frequently until the vegetables begin to soften.
  • Pour in the vegetable broth and add the diced tomatoes. Stir to combine.
  • Season the mixture with dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Bring to a gentle simmer.
  • Add the ravioli to the pot and cook according to the package instructions, usually about 4-5 minutes for fresh ravioli and 8-10 minutes for frozen.
  • Once the ravioli are cooked, stir in the fresh spinach leaves until wilted, about 1-2 minutes.
  • Remove from heat and stir in the chopped parsley.
  • Serve hot, topped with grated Parmesan cheese, if desired.
