For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup grated Pecorino cheese
  • 1 cup breadcrumbs
  • 2 pieces lemons zest of
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Olive oil for frying

Preparation

  • Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for a mixture of breadcrumbs, grated Pecorino cheese, lemon zest, garlic powder, salt, black pepper, and paprika.
  • Pat each chicken breast dry with paper towels.
  • Season each side with salt and pepper.
  • Dredge each chicken breast in the flour, shaking off any excess.
  • Dip the chicken into the beaten eggs, ensuring it’s coated well.
  • Coat the chicken in the breadcrumb mixture, pressing down gently to ensure the coating sticks well.

Cooking

  • Preheat a large skillet over medium heat and add enough olive oil to cover the bottom of the pan.
  • Place the coated chicken breasts into the hot oil in the skillet.
  • Cook for about 5-7 minutes on each side or until they reach a golden brown color and the internal temperature reaches 165°F (75°C).
  • Once cooked, remove the chicken from the skillet and let it rest on a paper towel-lined plate to absorb any excess oil.
  • Drizzle with fresh lemon juice before serving and enjoy.

Notes

For best results, let the seasoned chicken rest for 15 minutes before breading. Maintain oil temperature at around 350°F (175°C). Serve with lemon wedges for added brightness.
