Ingredients
  

Main ingredients

  • 2 cups ground egusi seeds Derived from melon seeds.
  • 1/2 cup palm oil Used for frying ingredients.
  • 1 medium onion, chopped For flavor base.
  • 2-3 cups water or stock Adjust for desired consistency.
  • 2-3 cups spinach or other leafy greens Can substitute with kale or bitter leaf.
  • 1-2 cups assorted meats (beef, goat, or chicken) Choose based on preference.
  • 2-3 tablespoons ground crayfish Adds depth to the flavor.
  • 1-2 teaspoons pepper Adjust to taste.
  • to taste Salt For seasoning.

Instructions
 

Preparation

  • Heat palm oil in a large pot over medium heat until warm.
  • Add the chopped onions and sauté until translucent.

Cooking

  • Introduce the assorted meats and brown them for about 5-7 minutes.
  • Stir in the ground egusi seeds and cook for a few minutes, stirring occasionally.
  • Gradually add water or stock to achieve desired soup consistency.
  • Incorporate ground crayfish, pepper, and salt. Stir thoroughly and let simmer for 15-20 minutes.
  • Add leafy greens and cook for an additional 5 minutes.
  • Serve hot with fufu, rice, or starchy side of choice.
