Ingredients

  • 1 cup einkorn flour Can be sifted for lighter texture.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter, softened Must be at room temperature.
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 piece egg

Mix-ins

  • 1 cup dark chocolate chips Use high-quality chocolate for best flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the einkorn flour, baking soda, and salt.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Beat in the vanilla extract and egg until well combined.
  • Gradually add the dry ingredients to the wet ingredients and mix gently until just combined.
  • Fold in the dark chocolate chips.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for 10 to 12 minutes, until the edges are golden but the centers are still slightly soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
