  • 1/2 teaspoon baking powder Additional leavening agent.
  • 1/4 teaspoon salt Brings out the flavors.
  • 1/2 cup walnuts, chopped Adds crunch.
  • 1 tablespoon instant espresso powder For rich coffee flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan and line it with parchment paper.
  • In a mixing bowl, combine the chopped dates and hot water. Stir in the baking soda and let it sit for about 15 minutes.
  • In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Beat in the eggs, one at a time, then add the vanilla extract and mix well.
  • Fold in the flour, baking powder, and salt gently, avoiding overmixing.
  • Incorporate the date mixture and instant espresso powder, stirring until well blended.
  • Gently fold in the chopped walnuts.
  • Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
