Main Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs thinly sliced
  • 3 bell peppers any color, sliced into strips
  • 1 large onion sliced thin
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • tortillas flour or corn, for serving

Fajita Seasoning Mix

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional, for heat

Instructions
 

  • Slice the chicken into thin, even strips for quicker cooking.
  • In a small bowl, mix all the seasoning spices together.
  • Toss the chicken with lime juice and spice mix. Set aside while you prep the vegetables.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, add the remaining tablespoon of oil. Add onions and bell peppers. Cook for 5–7 minutes until softened and slightly charred.
  • Return the cooked chicken to the skillet. Stir everything together and heat through. Serve hot with warm tortillas and your favorite toppings.

Notes

Wrap tortillas in foil and warm them in the oven for soft, pliable wraps. Marinate the chicken longer for extra flavor if you have time. You can also serve the filling in bowls, lettuce wraps, or over rice.
