Fig, Almond, and Date Cake

Ingredients
  

Dried Fruits

  • 1 cup dried figs, chopped
  • 1 cup Medjool dates, pitted and chopped

Dry Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional) Enhances flavor
  • 1/4 teaspoon ground nutmeg (optional) Enhances flavor

Wet Ingredients

  • 3 large eggs
  • 1/2 cup coconut oil (melted) or unsalted butter Choose based on preference
  • 1 cup brown sugar or coconut sugar
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup sliced almonds For topping the cake

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  • In a medium bowl, combine the chopped figs and dates. If using, sprinkle ground cinnamon and nutmeg. Set aside.

Mixing

  • In a separate large mixing bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, and salt.
  • In another bowl, whisk the eggs until frothy. Then, add the melted coconut oil or butter, brown sugar, and vanilla extract. Mix until smooth and well combined.
  • Gently fold the wet ingredients into the dry ingredients until just combined.
  • Carefully fold the chopped figs and dates into the batter, ensuring even distribution.

Baking

  • Pour the batter into the prepared cake pan and level the top with a spatula. Sprinkle sliced almonds over the top.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Once done, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely.

Notes

For best results, chop dried fruits into uniform pieces and soak them in warm water for 10-15 minutes before using. This enhances moisture in the cake.
