Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts or thighs Cut into bite-sized pieces
  • 2 tablespoons cornstarch For coating the chicken
  • to taste salt and pepper For seasoning
  • 2 tablespoons oil for cooking Use vegetable or canola oil

For the Vegetables

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 2 carrots, sliced
  • 2 green onions, chopped (for garnish)

For the Sauce

  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons sriracha sauce Adjust for spice preference
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • to taste red pepper flakes (optional) Optional for extra spice

Instructions
 

Preparation

  • Cut the chicken into bite-sized pieces and toss with cornstarch, salt, and pepper in a bowl. Let marinate for about 15 minutes.
  • Chop the bell peppers into chunks and slice the carrots. Set aside the broccoli florets and snap peas.

Cooking

  • Heat oil in a large skillet or wok over medium-high heat. Add marinated chicken in a single layer and cook undisturbed for 3-4 minutes until golden brown. Stir occasionally for another 3-4 minutes until fully cooked through. Remove chicken and set aside.
  • In the same skillet, add chopped bell peppers, broccoli, snap peas, and sliced carrots. Stir-fry for about 3-5 minutes until crisp-tender.
  • Return the chicken to the skillet with the vegetables.
  • In a bowl, whisk together soy sauce, hoisin sauce, sriracha, honey, minced garlic, minced ginger, and optional red pepper flakes. Pour over chicken and vegetables, stirring to coat.
  • Cook for an additional 2-3 minutes to thicken the sauce and caramelize.

Serving

  • Serve hot over rice or noodles, garnished with chopped green onions and sesame seeds.

Notes

Marinate chicken longer for added flavor. High heat is essential for stir-frying. Feel free to customize the vegetables according to preference.
