Meatball Ingredients

  • 1 pound ground beef or ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg, beaten

Lemon Sauce Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice Freshly squeezed recommended
  • 1 tablespoon olive oil
  • 1 whole lemon, zest
  • to taste extra parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix the ground meat with breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, pepper, and the beaten egg until well combined.
  • Roll the mixture into small meatballs, about one inch in diameter, and place them on a baking sheet lined with parchment paper.

Cooking

  • Bake the meatballs for 20 to 25 minutes until they are browned and cooked through.
  • While the meatballs bake, prepare the lemon sauce. In a medium saucepan, heat olive oil over medium heat.
  • Add the chicken broth, fresh lemon juice, and lemon zest, stirring well to combine. Bring the sauce to a gentle simmer.
  • Once the meatballs are done, transfer them to the saucepan. Allow them to simmer in the sauce for an additional 5 to 10 minutes, letting the flavors meld together. Stir occasionally to ensure the meatballs are nicely coated in the sauce.

Notes

For best flavor, do not overmix the meat mixture. Let formed meatballs rest in the fridge for 30 minutes before baking. Fresh lemon juice gives the best flavor; add a touch of honey for sweetness, if desired. For a thicker sauce, mix cornstarch with cold water and stir it into the sauce while simmering.
