  • 4 medium ripe bananas or 3 large bananas
  • 0.5 cup granulated sugar adjust the sweetness to taste
  • cup unsalted butter melted but not too hot
  • 2 large eggs can substitute with flaxseed meal for a vegan option
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2.5 cups old-fashioned rolled oats gluten-free if necessary

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Lightly spray a 9x5-inch loaf pan with non-stick baking spray or line with parchment paper.

Mixing

  • In a large blender, add the ripe bananas and mash them until smooth.
  • Add the granulated sugar, melted butter, eggs, and vanilla extract to the blender.
  • Incorporate the baking soda, baking powder, ground cinnamon, salt, and rolled oats.
  • Blend everything together at high speed for about 30 to 60 seconds until smooth.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 40 to 45 minutes. Test for doneness with a toothpick.
  • After baking, allow the banana bread to cool completely in the pan.

Serving

  • Once cooled, slice the banana bread and serve as desired.
