  • 6 large large eggs
  • 1 cup cottage cheese
  • 1 cup fresh spinach, chopped
  • 1 medium bell pepper, diced
  • 1 small onion, finely chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil For greasing the muffin tin
  • to taste fresh herbs (such as chives or parsley) for garnish Optional

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or olive oil.
  • In a large mixing bowl, whisk together the eggs until they are well beaten.
  • Add the cottage cheese to the eggs and mix until you have a smooth consistency.
  • Stir in the chopped spinach, diced bell pepper, onion, shredded cheese, garlic powder, salt, and black pepper. Mix everything until combined evenly.
  • Pour the mixture evenly into each muffin cup, filling each about three-quarters full.

Baking

  • Bake in the preheated oven for 20-25 minutes or until the muffins are puffed and lightly golden on top.
  • Remove from the oven and let them cool for a few minutes before gently removing them from the muffin tin.
