Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  • Cut the softened butter into the dry ingredients using a pastry cutter or two forks until you achieve a crumbly texture.
  • In another bowl, combine the Greek yogurt, baking soda, and honey (if using) and mix until smooth.
  • Add the yogurt mixture to the dry ingredients and gently fold until just combined, avoiding overmixing.
  • If the dough feels too dry, add a little milk, one tablespoon at a time, until you reach a soft, slightly sticky consistency.

Shaping and Baking

  • Turn the dough out onto a floured surface and knead gently for about 1 minute to bring it together.
  • Pat the dough into a 1-inch thick round and use a biscuit cutter to cut out biscuits, placing them on the prepared baking sheet.
  • Bake for 12 to 15 minutes or until golden brown on top.
  • Remove from the oven and let cool slightly before serving.
