Ingredients

  • 2 large egg whites Ensure are clean and dry for best results.
  • 1 cup granulated sugar Add gradually to maintain fluffiness.
  • 1 teaspoon vanilla extract For added flavor.
  • 1/4 teaspoon salt
  • 1 cup chocolate chips or chopped nuts Optional mix-ins for customization.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a clean, dry bowl, combine the egg whites and salt. Use an electric mixer to beat the egg whites until they form soft peaks.
  • Gradually add the granulated sugar, continuing to beat the mixture until it becomes glossy and stiff peaks form. This process usually takes about 5 to 7 minutes.
  • Gently fold in the vanilla extract. If you are using chocolate chips or nuts, fold them in as well.
  • Use a spoon or a cookie scoop to drop dollops of the mixture onto the prepared baking sheet, leaving space between each dollop.

Baking

  • Once prepared, turn off the oven and place the baking sheet inside. Close the oven door and let the cookies sit in the warm oven for at least 1 hour, preferably overnight.
  • After resting, remove them from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container with parchment paper between layers. For extended storage, wrap individually and freeze.
