Sandwich Ingredients

  • 8 slices sturdy bread (such as sourdough or ciabatta) Choose a sturdy type that holds up well.
  • 8 ounces roast beef, thinly sliced Leftover roast beef works well.
  • 8 slices cheese (provolone or Swiss) Feel free to mix in other cheeses.
  • 2 tablespoons butter, softened For spreading on the bread.

Dipping Broth

  • 1 cup beef broth Heat over low heat while sandwiches cook.
  • to taste none pepper For seasoning.
  • fresh herbs none like thyme or rosemary For garnish.

Instructions
 

Preparation

  • Heat a skillet over medium heat.
  • Spread a thin layer of softened butter on one side of each slice of bread.

Cooking

  • Place half of the bread slices, buttered side down, in the skillet.
  • Layer the roast beef evenly over these bread slices, then top with cheese.
  • Place the remaining bread slices on top, buttered side up.
  • Cook until the bottom is golden brown, about 4-5 minutes.
  • Carefully flip the sandwiches and cook the other side until golden and cheese is melted, another 4-5 minutes.
  • While the sandwiches cook, heat the beef broth in a small saucepan over low heat.

Serving

  • Once the sandwiches are done, remove them from the skillet and slice them diagonally.
  • Serve immediately with a small bowl of warm beef broth for dipping.
