Preparation

  • Heat a large pot over medium heat and add the butter and olive oil.
  • Once melted, add the thinly sliced onions and cook slowly, stirring occasionally for about 20 to 25 minutes until they are caramelized.
  • Sprinkle in the thyme, along with salt and pepper to taste, and stir to combine.
  • Add the rice to the pot and stir well to coat each grain with the onion mixture.

Cooking

  • Pour in the beef broth and bring to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 18 to 20 minutes until the rice is tender.
  • Remove the pot from heat and stir in the grated Gruyère cheese, allowing it to melt before serving.

Serving

  • Serve warm, garnished with freshly chopped parsley.
