Ingredients
  

For the Chicken

  • 2 pieces Chicken breast (boneless and skinless) Use fresh chicken for best results.
  • 2 pieces Eggs Beaten for marinating.
  • 1/2 cup Milk Whole milk recommended.
  • 1/2 cup All-purpose flour For dredging the chicken.
  • 1 cup Breadcrumbs For coating the chicken.
  • 1 tablespoon Sugar Adds sweetness.
  • 1 teaspoon Cinnamon For flavor.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black pepper To taste.
  • 1 teaspoon Vanilla extract For flavor in French toast mixture.

For the French Toast

  • 4 slices Bread (thick slices, such as brioche or challah) Thick slices recommended for better soaking.
  • 1/4 cup Cooking oil For frying.
  • Maple syrup for serving To drizzle on top.
  • Fresh fruit optional, for serving Recommended: strawberries, blueberries, or banana slices.

Instructions
 

Marinating the Chicken

  • In a bowl, combine two beaten eggs, milk, salt, and pepper. Place the chicken breasts in the mixture, ensuring they are well-coated. Let it marinate for at least 30 minutes.

Preparing the French Toast Mixture

  • In another bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla extract.

Coating the Chicken

  • Remove the chicken from the marinade and strain off excess liquid. Dredge each chicken piece in flour, dip into the French toast mixture, and finally coat with breadcrumbs.

Frying the Chicken

  • Heat cooking oil in a skillet over medium heat. Fry the breaded chicken for about 4-5 minutes on each side or until golden brown and fully cooked.

Cooking the French Toast

  • In the same skillet, soak the bread slices in the remaining egg mixture and cook until golden brown on both sides (about 2-3 minutes each side).

Assembling the Sandwich

  • Start with a slice of French toast, add a piece of fried chicken on top, followed by another slice of French toast. Drizzle with maple syrup and add fresh fruit if desired.
