Chicken Wings

  • 2 pounds chicken wings Use fresh, thawed wings for best results.

Seasoning Mixture

  • 2 teaspoons smoked paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper Optional for those who like it spicy.

Coating Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder

Frying

  • 1/2 cup oil Enough to fill an inch of the pan.

Instructions
 

Preparation

  • Pat the chicken wings dry with paper towels to ensure a crispy texture.
  • If not already separated, use a knife or kitchen scissors to divide the flats from the drums.

Mixing Dry Ingredients

  • In a large bowl, combine the smoked paprika, dried parsley, salt, garlic powder, onion powder, black pepper, and cayenne pepper if desired.
  • Stir in the all-purpose flour, cornstarch, and baking powder until well blended.

Coating the Chicken

  • Toss the chicken wings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Frying

  • Heat the oil in a deep fryer or deep pot to 350°F.
  • Carefully add wings in batches, frying for about 8-10 minutes, turning occasionally, until golden and crispy.

Draining

  • Place the fried wings on a wired rack over a baking sheet to drain excess oil.
  • Let them rest for a few minutes before serving.

Notes

For a spicy kick, toss wings in hot sauce after frying. Serve with a variety of dipping sauces for added flavor.
