Instructions
In a mixing bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Gently fold in the diced strawberries into the cream cheese mixture.
Spread a generous amount of the cream cheese mixture on two slices of bread and top with the remaining slices to form sandwiches.
Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
Dredge each sandwich in flour, dip in beaten eggs, then coat with breadcrumbs.
Heat oil in a frying pan over medium heat. Fry each sandwich for 2-3 minutes on each side until golden brown.
Drain on paper towels to remove excess oil. Serve warm, optionally with whipped cream.
