  • 16 oz red bell peppers, diced
  • 1/2 purple onion, finely chopped
  • 1 lb cheddar cheese, shredded or cubed
  • Creamy dressing (such as ranch or a mix of mayonnaise and sour cream) Adjust to taste.
  • Fritos corn chips, for topping Add just before serving.

  • Gather all the ingredients. If using canned corn, drain it thoroughly. For frozen corn, cook according to package instructions and allow to cool.
  • In a large bowl, combine the corn, diced red bell peppers, and finely chopped purple onion.
  • Incorporate the cheddar cheese into the vegetable mixture.
  • Drizzle your preferred creamy dressing over the mixture, adjusting the amount based on your taste.
  • Toss everything gently to combine, ensuring the dressing coats all ingredients well.
  • Top your salad with Fritos corn chips before serving.
  • Chill in the refrigerator for 30 minutes before serving to allow flavors to meld.
