Ingredients
  

Base Ingredients

  • 2 cups cottage cheese Use full-fat for a creamier texture.
  • 1/4 cup honey or maple syrup For sweetness.
  • 1 teaspoon vanilla extract Enhances flavor.
  • Pinch salt Balances sweetness.

Toppings

  • 1/2 cup mixed nuts (almonds, walnuts, or pecans) For crunch.
  • 1/2 cup dried fruit (raisins, cranberries, or apricots) Adds chewiness.
  • 1/4 cup chia seeds For added nutrition.
  • 1/2 cup fresh berries (strawberries, blueberries, or raspberries) For freshness.
  • cacao nibs optional dark chocolate chips or cacao nibs Topping for extra flavor.

Instructions
 

Preparation

  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the cottage cheese, honey or maple syrup, vanilla extract, and a pinch of salt. Mix well until smooth.
  • Fold in the mixed nuts, dried fruit, and chia seeds into the cottage cheese mixture.
  • Pour the mixture onto the prepared baking sheet and spread it evenly.
  • Scatter the fresh berries over the top and slightly press them down.
  • If desired, sprinkle dark chocolate chips or cacao nibs on top.

Freezing

  • Place the baking sheet in the freezer for about 3 to 4 hours, or until solid.

Serving

  • Remove the bark from the baking sheet using the parchment paper for leverage, and break into pieces.
  • Store the pieces in an airtight container in the freezer until ready to enjoy.
