  • 2 cups plain Greek yogurt Choose high-quality yogurt for best flavor.
  • 1 cup creamy peanut butter Use natural peanut butter without added sugars or oils.
  • ¼ cup honey or maple syrup Can substitute with agave syrup or stevia if desired.
  • 1 teaspoon vanilla extract For enhanced flavor.

Toppings

  • ½ cup granola or crushed nuts Add your choice of nuts for garnish.
  • ¼ cup chocolate chips or coconut flakes Optional, for added sweetness.

Preparation

  • In a large mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir well until smooth and creamy.
  • Line a baking sheet with parchment paper to prevent sticking.
  • Use a small cookie scoop or spoon to drop dollops of the yogurt mixture onto the lined baking sheet, forming small bite-sized rounds.
  • Sprinkle your chosen toppings over each dollop.

Freezing

  • Place the baking sheet in the freezer and let it chill for at least 2-3 hours, or until fully frozen.
  • Once frozen, remove the bites from the baking sheet and transfer them to a resealable bag or airtight container for storage.
  • Return the container to the freezer for future snacks.

Notes

To adapt for different flavors, consider adding pureed fruit or varying the type of nut butter. Reduce freezing time slightly to keep bites chewy.
