  • 1 cup Greek yogurt (plain or flavored) Choose a yogurt that you enjoy eating.
  • 1/2 cup creamy peanut butter Substitute with almond or sunflower seed butter if desired.
  • 2 tablespoons honey or maple syrup Adjust the amount to taste for sweetness.
  • 1/4 teaspoon vanilla extract
  • 1 pinch salt

Optional Toppings

  • to taste Mini chocolate chips or chopped nuts Use for topping.

Preparation

  • In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix well until everything is smooth and creamy.
  • Line a baking sheet with parchment paper.
  • Using a spoon or a small scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Shape them into small bites or drop them in clusters.
  • If desired, sprinkle mini chocolate chips or chopped nuts on top of each bite.
  • Place the baking sheet in the freezer and let the bites freeze for about 2-3 hours or until solid.
  • Once frozen, transfer the bites to an airtight container or a zip-top bag for storage.
