Preparation

  • Start by arranging your cubed beef and potatoes evenly in the slow cooker.
  • In a medium saucepan, melt your butter on low heat.
  • Once your butter is melted, add in the minced garlic and stir for about 1 to 2 minutes.
  • Add salt, black pepper, and dried thyme to the garlic butter and stir well.
  • Pour the garlic butter mixture generously over the beef and potatoes.
  • Pour in the beef broth and give everything a good stir.

Cooking

  • Cover your slow cooker with its lid and set it to low.
  • Let it cook for 6 to 8 hours until the beef is tender.

Serving

  • Scoop some out while it’s hot and serve with warm bread, if desired.
  • Garnish with fresh parsley before serving.
