Garlic Butter Sweet Potato Bake

Ingredients
  

For the garlic butter sauce

  • 1 tsp cornstarch
  • 1.5 cups heavy cream
  • 0.5 cups butter (1 stick)
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

For the bake

  • 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
  • 1/3 cup fresh parmesan cheese, grated

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Melt the butter in a large saucepan over medium heat.
  • Add the minced garlic to the melted butter and sauté for about a minute until fragrant, but not browned.
  • Sprinkle in the cornstarch and stir it into the butter and garlic mixture.
  • Gradually pour in the heavy cream while stirring continuously until well blended.
  • Season the sauce with kosher salt, black pepper, and fresh thyme, then let it simmer for a few minutes.
  • Slice the sweet potatoes into 1/8-inch rounds.

Assembly

  • In a large baking dish, layer the sliced sweet potatoes, pouring some of the creamy garlic mixture over each layer.
  • Finish with one last layer of the creamy mixture and sprinkle the grated Parmesan cheese on top.

Baking

  • Cover the dish with aluminum foil and bake for about 45 minutes.
  • Remove the foil for the last 15 minutes to allow the top to crisp up and turn golden brown.
  • Once baked, allow the dish to cool slightly before serving.

Notes

For a spicy kick, add crushed red pepper flakes to the sauce. This dish can be made a day in advance and baked just before serving.
