Ingredients
  

Main Ingredients

  • 2 lbs bone-in chicken thighs or drumsticks (skin removed)
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley (optional for garnish)

Sauce Ingredients

  • cup grated Parmesan cheese
  • ½ cup unsalted chicken broth
  • ½ cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • ½ tsp ground black pepper
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp paprika (optional)
  • to taste crushed red pepper flakes (optional)

Optional Vegetables

  • chopped broccoli or green beans (added in last hour)
  • sweet potatoes instead of white potatoes (if desired)

Instructions
 

Preparation

  • Wash the baby potatoes thoroughly and cut them in half.
  • Trim excess fat from the chicken and remove the skin if preferred.

Layering

  • Place the halved potatoes at the bottom of the crockpot.
  • Arrange the chicken over the potatoes.

Sauce Preparation

  • In a separate bowl, whisk together chicken broth, heavy cream, olive oil, minced garlic, grated Parmesan cheese, and the seasonings.
  • Ensure the sauce is well blended.

Cooking

  • Pour the sauce over the chicken and potatoes, ensuring everything is well-coated.
  • Cover the crockpot and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  • Add chopped broccoli or green beans during the last hour of cooking.

Serving

  • Garnish with chopped fresh parsley or an extra sprinkle of Parmesan cheese before serving.
  • Serve using a slotted spoon to dish out the chicken, potatoes, and veggies, drizzled with sauce.

Notes

For extra flavor, consider marinating the chicken before cooking. You can use pre-minced garlic for convenience, but fresh garlic adds a richer flavor. Adjust seasonings to your taste and feel free to substitute with different vegetables.
