  • 4 pieces chicken breasts (boneless and skinless)
  • 4 medium potatoes (cut into wedges)
  • 1 cup grated Parmesan cheese Use freshly grated for best results.
  • 4 cloves garlic (minced)
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon paprika
  • 4 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • for garnish Fresh parsley (chopped)

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine garlic, Parmesan cheese, Italian herbs, paprika, olive oil, salt, and pepper.
  • Add the chicken breasts to the bowl and coat them evenly with the mixture.
  • In another bowl, toss the potato wedges with any remaining garlic Parmesan mixture until they are well coated.
  • Grease a large baking dish with cooking spray or olive oil.
  • Arrange the chicken breasts in the center of the dish and spread the potato wedges around them in a single layer.

Cooking

  • Bake in the preheated oven for about 30 to 35 minutes or until the chicken is cooked through and the potatoes are golden and crispy.
  • An internal temperature of 165°F (75°C) indicates the chicken is done.
  • Remove from the oven and let sit for a few minutes.
  • Garnish with fresh parsley before serving.

Notes

For best results, use freshly grated Parmesan cheese and consider marinating the chicken for extra flavor. Store leftovers in an airtight container in the refrigerator for up to four days or freeze for up to three months.
