Ingredients
  

For the Chicken Bites

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

For the Rotini

  • 12 oz rotini pasta
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon nutmeg (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  • Add the cut chicken pieces to the bowl and toss until well-coated.
  • Drizzle olive oil over the chicken and toss again. Spread the chicken bites on the prepared baking sheet in a single layer.

Cooking

  • Bake the chicken for 15 to 20 minutes or until golden brown and fully cooked.
  • While the chicken is baking, cook the rotini pasta according to the package instructions. Drain and set aside.
  • In a large skillet, melt butter over medium heat and sauté minced garlic for about one minute.
  • Pour in the heavy cream and let it simmer, stirring in freshly grated Parmesan cheese until melted and thickened.
  • Add the cooked rotini to the skillet and fold into the sauce, seasoning with salt, pepper, and nutmeg.
  • Once the chicken is ready, add it to the skillet with the pasta and sauce, tossing to combine.

Serving

  • Serve the creamy rotini on plates and arrange the crispy chicken bites on top.
  • Garnish with chopped parsley and optionally sprinkle with extra Parmesan cheese.

Notes

For extra crispy chicken, consider double-coating the chicken bites. Adjust seasoning to your preference.
