Garlic Parmesan Chicken Soup

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Freshly grated is recommended
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 pieces carrots, diced
  • 2 stalks celery, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion, carrots, and celery. Sauté until the vegetables soften, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Pour in the chicken broth, and add the shredded chicken, thyme, oregano, and bay leaf. Bring to a boil.
  • Reduce the heat and let it simmer for 15 minutes.
  • Remove the bay leaf and stir in the heavy cream.
  • Mix well, then add the grated Parmesan cheese. Stir continuously until the cheese melts and the soup becomes creamy.
  • Season with salt and pepper to taste. Let the soup simmer for another 5-10 minutes.

Serving

  • Serve hot, garnishing with fresh parsley.

Notes

Using freshly grated Parmesan cheese enhances the creamy texture. For a thicker soup, you can simmer it longer or add a cornstarch slurry.
