  • 12 ounces cheese tortellini Can use frozen tortellini, adjust cooking time if needed.
  • 2 medium chicken breasts, cubed Season with salt and pepper.
  • 2 cups fresh broccoli, cut into florets Steam to retain color and crispness.
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Extra for serving if desired.
  • 4 cloves garlic, minced Be careful not to burn.
  • 2 tablespoons butter Used for sautéing.
  • 2 tablespoons olive oil For searing chicken.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Bring a large pot of salted water to boil. Add the cheese tortellini and cook according to package instructions until al dente, about 3-5 minutes. Reserve 1 cup of pasta water, then drain and set tortellini aside.
  • Steam the broccoli florets for 3-4 minutes until bright green and tender. Plunge into ice water to stop cooking. Drain and set aside.
  • Season cubed chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
  • In the same skillet, reduce heat and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  • Gradually pour in heavy cream while whisking to prevent lumps. Add grated Parmesan cheese and whisk until a creamy sauce forms. If too thick, add reserved pasta water to reach desired consistency.
  • Return cubed chicken, tortellini, and steamed broccoli to the skillet. Toss gently to coat in the sauce. Serve immediately.

Notes

Consider garnishing with freshly chopped parsley or extra Parmesan. Store leftovers in an airtight container in the refrigerator for up to 3 days.
