Ingredients
  

For the potatoes

  • 1.5 pounds baby potatoes, washed and halved Choose uniformly sized for even cooking.
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced Consider roasting some cloves for a milder flavor.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped For garnish
  • 1 tablespoon lemon juice Drizzle over potatoes after baking.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, salt, black pepper, and paprika. Mix until the potatoes are well coated.

Cooking

  • Spread the coated potatoes in a single layer on a baking sheet, ensuring enough space for even roasting.
  • Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and fork-tender. Toss them halfway through for even crispiness.
  • Once cooked, remove the potatoes from the oven, drizzle with lemon juice, and toss gently to combine.
  • Serve hot, garnished with fresh parsley.

Notes
