Ingredients
  

Gelatin Base

  • 2 cups fruit juice (your favorite flavor)
  • 2 tablespoons unflavored gelatin powder
  • 1/2 cup sugar adjust based on your taste
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • Fresh fruit pieces (optional)
  • Food coloring (optional)
  • Non-stick cooking spray

Instructions
 

Preparation

  • In a small pot, combine the fruit juice and sugar. Heat the mixture over low heat until the sugar dissolves completely.
  • Sprinkle the unflavored gelatin over the warm juice and stir until it fully dissolves.
  • Remove the pot from heat and allow it to cool slightly.
  • In a separate bowl, whip the heavy cream until it forms soft peaks.
  • Gently fold the whipped cream into the gelatin mixture until well combined and smooth.
  • If desired, add a few drops of food coloring and stir until evenly distributed.
  • Lightly spray a mold or a dish with non-stick cooking spray.
  • Pour half of the gelatin mixture into the mold. If using fresh fruit pieces, gently place them into this layer.
  • Refrigerate for about 30 minutes, or until it starts to set.
  • Once the first layer is slightly firm, pour the remaining gelatin mixture on top.
  • Chill in the refrigerator for at least 4 hours, or until completely set.
  • To serve, carefully remove the gelatin from the mold and slice into squares or wedges.

Notes

Consider presenting your gelatin on a decorative platter. Enhance the presentation with fresh mint or berries. You can also serve with whipped cream or yogurt on the side for added contrast.
