German Potato Pancakes

  • 4 large large potatoes (about 2 pounds, preferably starchy potatoes like Russets)
  • 1 medium medium onion
  • 2 large large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt for seasoning
  • 1/2 teaspoon black pepper for seasoning
  • as needed none vegetable oil for frying

Instructions
 

Preparation

  • Peel the potatoes and onion, then grate them finely using a box grater or food processor.
  • Place the grated potatoes and onion into a clean dish towel and squeeze out excess moisture.
  • In a large bowl, mix the drained potato and onion mixture with the eggs, flour, salt, and pepper until it forms a thick batter.

Cooking

  • Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
  • Once the oil is shimmering, drop spoonfuls of the potato mixture into the skillet and flatten slightly.
  • Fry for about 3-4 minutes or until the edges are golden brown, then flip and cook for another 3-4 minutes.
  • Transfer the cooked pancakes to a plate lined with paper towels to absorb excess oil.
  • Repeat with the remaining potato mixture, adding more oil as needed.

Notes

For a perfect texture, select starchy potatoes and squeeze out moisture. Ensure your frying oil is hot to avoid greasy pancakes. Keep cooked pancakes warm in a low oven if serving a large batch.
