  • 4 large large potatoes, peeled and diced Use starchy potatoes like Russet or Yukon Gold for the best texture.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced Other vegetables can be added for flavor.

Liquids

  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream For a lighter option, consider half-and-half or coconut milk.
  • 2 tablespoons olive oil

Seasoning

  • Salt and pepper to taste

Garnish

  • Chopped chives or parsley for garnish Enhances flavor and presentation.

Instructions
 

Preparation

  • Select a large pot and place it on the stove over medium heat.
  • Add two tablespoons of olive oil and warm it up for a minute.
  • Add the chopped onion, diced carrots, and diced celery, stirring gently for 5 to 7 minutes until softened.

Cooking

  • Introduce the diced potatoes to the pot.
  • Pour in four cups of vegetable or chicken broth and bring the mixture to a gentle boil.
  • Once boiling, lower the heat and let it simmer for 15 to 20 minutes until the potatoes are softened.
  • If a thicker consistency is desired, mash some potatoes during the last few minutes of cooking.
  • Stir in one cup of heavy cream, adding salt and pepper to taste.

Serving

  • Ladle the warm soup into bowls and garnish with chopped chives or parsley.
  • Serve with crusty bread, rolls, or a fresh salad on the side.
