  • 4 fillets cod fillets (6 oz each) Fresh cod fillets are recommended.
  • 2 tbsp fresh ginger, grated Use fresh ginger for the best flavor.
  • 1/4 cup low-sodium soy sauce Choose low-sodium to avoid overly salty dish.
  • 2 tbsp honey Adds natural sweetness to balance the dish.
  • 1 tbsp lemon juice Fresh lemon juice enhances the flavors.
  • 2 green onions chopped (for garnish) Use for garnish before serving.
  • 1 tbsp toasted sesame seeds (optional) Optional for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, whisk together the soy sauce, honey, grated ginger, and lemon juice to create the marinade and glaze.
  • Place the cod fillets in a shallow dish and pour half of the marinade over them. Allow the fish to marinate for at least 15-30 minutes.

Cooking

  • Arrange the marinated cod on a greased baking sheet in a single layer. Brush the remaining marinade over the top.
  • Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • Optionally, toast sesame seeds in a skillet over medium heat during this time.

Serving

  • Serve the cod garnished with chopped green onions and toasted sesame seeds, if using. Drizzle any leftover glaze from the baking sheet over the fish.

Notes

For variations, consider garlic in the marinade or using different fish like salmon. Store leftovers in an airtight container for up to 2 days, or freeze for up to 3 months.
