Ingredients
  

For the Cupcakes

  • 2 3/4 cups all-purpose flour
  • 3 tablespoons ground ginger
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 10 tablespoons unsalted butter, at room temperature
  • 1 cup packed dark brown sugar
  • 3 large eggs, at room temperature
  • 1 1/4 cups molasses
  • 1 cup hot water, heated to 100 degrees F

For the Cinnamon Cream Cheese Frosting

  • 8 tablespoons unsalted butter, at room temperature
  • 12 ounces cream cheese, at room temperature
  • 8 cups powdered sugar, sifted
  • 4 teaspoons ground cinnamon for frosting
  • 1 teaspoon pure vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • Line 2 muffin tins with 24 cupcake liners.
  • In a mixing bowl, sift together the all-purpose flour, ground ginger, baking soda, ground cinnamon, nutmeg, cloves, and salt.
  • In a separate large bowl, beat the unsalted butter and dark brown sugar until fluffy and light in color.
  • Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Then pour in the molasses and blend well.
  • Gradually mix the flour mixture into the butter and sugar mixture, alternating with the hot water until just combined.
  • Fill each cupcake liner about two-thirds full with the batter.

Baking

  • Bake in the preheated oven for 16 to 18 minutes, or until a toothpick comes out clean.
  • Cool the cupcakes in the tins for about 5 minutes, then transfer to a wire rack to cool completely.

Frosting

  • Beat together the unsalted butter and cream cheese until creamy. Add sifted powdered sugar, ground cinnamon, and vanilla extract, mixing until smooth.
  • Once cooled, frost the cupcakes with the cinnamon cream cheese frosting.
  • Garnish with extra ground cinnamon or festive sprinkles if desired.
