  • 1 whole rotisserie chicken, shredded
  • 4 cups chicken broth
  • 2 cups gluten-free noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • for garnish Fresh parsley optional

Preparation

  • Gather all your ingredients.
  • Heat a splash of oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened and translucent.
  • Stir in minced garlic and cook for one minute until fragrant.

Cooking

  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, add gluten-free noodles and cook according to package instructions for 8-10 minutes.
  • Stir in the shredded rotisserie chicken and season with salt and pepper to taste.
  • Allow the soup to simmer for a few minutes to meld flavors.
  • Serve hot, garnished with fresh parsley if desired.

Notes
