Base Ingredients

  • 1 cup gluten-free flour Ensure it's a blend that contains xanthan gum.
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Mix-ins

  • 1 cup chocolate chips Feel free to use dark, milk, or white chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add in the egg and vanilla extract, mixing until fully incorporated.
  • In another bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips.

Baking

  • Spoon the cookie dough onto a lined baking sheet, leaving enough space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, until edges are golden brown but centers are soft.
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
