  • 1 cup gluten-free oats
  • 1 cup gluten-free flour blend
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.5 cup coconut oil (melted)
  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the gluten-free oats, gluten-free flour blend, baking soda, baking powder, and salt. Mix well.
  • In another bowl, whisk together the melted coconut oil, brown sugar, and granulated sugar until smooth.
  • Add the egg and vanilla extract to the sugar mixture and stir until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, folding gently until no flour mixture remains visible.
  • Finally, fold in the raisins, making sure they're evenly distributed throughout the cookie dough.
  • Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving space between each.

Baking

  • Bake for 10-12 minutes or until the edges turn golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
