Ingredients

  • 2 cups gluten-free all-purpose flour Ensure it contains xanthan gum for best results.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Bring to room temperature before using.
  • 1 cup sugar
  • 1 large egg Room temperature preferred.
  • 1 teaspoon vanilla extract

Icing Ingredients

  • 1/2 cup powdered sugar For icing.
  • 1-2 tablespoons milk Adjust for desired consistency.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together gluten-free flour, baking soda, and salt.
  • In a large mixing bowl, cream softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until a cohesive dough forms.
  • Roll the dough into 1-inch balls and place on a baking sheet lined with parchment paper.
  • Gently flatten each ball slightly with the palm of your hand.

Baking

  • Bake cookies in the preheated oven for 10 to 12 minutes, until edges are light golden and centers remain soft.
  • Allow cookies to cool on the baking sheet for a minute before transferring to a wire rack.

Icing

  • Mix powdered sugar with enough milk to drizzle over cooled cookies.
  • Drizzle icing over cookies for a sweet finishing touch.
