Ingredients
  

For the Filling

  • 8 ounces goat cheese, softened
  • 1/2 cup cream cheese, softened
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • to taste Salt

For the Peppers

  • 12 pieces mini sweet peppers Cut in half and seeded

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut the mini peppers in half lengthwise and remove the seeds and membranes.
  • In a mixing bowl, combine the softened goat cheese and cream cheese until smooth and creamy.
  • Add the chopped parsley, chives, garlic powder, onion powder, black pepper, cayenne pepper, and salt. Mix well until all ingredients are combined.
  • Using a spoon or piping bag, fill each mini pepper half with the goat cheese mixture.
  • Place the stuffed peppers on a baking sheet, cut side up.

Baking

  • Bake for 15-20 minutes until the peppers are tender and the tops are lightly golden.
  • Remove from the oven and let them cool slightly before serving.
