Ingredients
  

  • 1 count red grapefruit segmented
  • 2 cups frozen pineapple chunks
  • 1/3 cup full-fat Greek yogurt
  • 1 Tbsp coconut oil
  • 1/4 inch fresh ginger peeled
  • Toppings grapefruit segments, berries, and granola

Instructions
 

  • Segment the red grapefruit over a bowl to catch the juice, then set aside.
  • In a high-speed blender, combine the grapefruit segments, juice, frozen pineapple chunks, Greek yogurt, coconut oil, and fresh ginger.
  • Blend until smooth. If the smoothie is too thick, add a little non-dairy milk to achieve your desired consistency.
  • Pour the smoothie into glasses or bowls.
  • Garnish with reserved grapefruit segments, berries, and granola before serving.
