  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 pieces carrots, diced
  • 2 stalks celery, diced
  • 1 medium potato, peeled and diced
  • 1 medium zucchini, diced
  • 1 cup chopped kale or spinach
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Juice of 1 lemon lemon
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  • Introduce the minced garlic into the pot and cook for an additional minute.
  • Add the diced carrots and celery and let them cook for about 5 minutes.
  • Add the diced potato and zucchini, stir, and cook for another 5 minutes.

Cooking

  • Pour in the vegetable broth and add the chickpeas. Add the dried oregano, thyme, ground cumin, salt, and pepper. Stir to combine.
  • Increase the heat to bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes or until the vegetables are tender.
  • Stir in the chopped kale or spinach and cook for a few more minutes until wilted.
  • Remove from heat and stir in the lemon juice. Adjust seasoning as needed.
  • Serve in bowls, garnished with fresh parsley.

Notes

For a richer flavor, drizzle high-quality olive oil on top when serving and offer lemon wedges on the side. This soup pairs well with crusty bread or a fresh salad.
