  • 1 lb chicken breast Organic chicken is preferable for better taste.
  • 4 cups chicken broth
  • 1 onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 lemons juiced Adjust based on taste preference.
  • 1 cup orzo or rice Choose based on your preference.
  • 2 cloves garlic minced
  • to taste Salt and pepper Adjust to flavor preference.
  • to taste Fresh parsley For garnish.

Preparation

  • Heat your instant pot on the sauté setting.
  • Add the chopped onions, diced carrots, diced celery, and minced garlic. Cook for about five minutes, stirring occasionally, until tender and aromatic.

Cooking

  • Add the chicken breast, chicken broth, lemon juice, salt, and pepper. Stir to coat the chicken in broth and vegetables.
  • Secure the lid on the instant pot and cook on high pressure for ten minutes.
  • After time is up, perform a quick release of the steam.
  • Carefully remove the chicken and shred it with two forks. Set aside.
  • Add orzo or rice to the pot and cook for an additional seven to ten minutes.
  • Stir in the shredded chicken and adjust seasoning to taste.

Serving

  • Serve hot, garnished with fresh parsley.
