Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.5 cups Greek yogurt
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest Zest from 1 lemon
  • 1 tablespoon lemon juice Juice from 1 lemon
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
  • In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, and salt. Whisk to blend.
  • In another bowl, mix together the Greek yogurt, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients. Stir gently until just mixed, being careful not to overmix; some lumps are okay.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes.
  • Then transfer it onto a wire rack to cool completely.

Notes
