Ingredients
  

For the marinade

  • 1 cup Greek yogurt Full-fat is recommended for creaminess.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 Juice of lemon
  • 1 zest of lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped Optional
  • 1 tablespoon fresh dill, chopped Optional

For the chicken

  • 4 pieces boneless, skinless chicken breasts

Instructions
 

Preparation

  • In a large bowl, combine the Greek yogurt, olive oil, garlic, lemon juice, and lemon zest.
  • Add the oregano, paprika, salt, pepper, and fresh herbs if using. Mix well until smooth.
  • Place the chicken breasts into the marinade, ensuring they are well coated.
  • Cover the bowl with plastic wrap or transfer the chicken into a resealable bag to minimize air contact.
  • Refrigerate for at least 2 hours, but ideally overnight for maximum flavor.

Cooking

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade, letting excess marinade drip off.
  • Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Remove from the grill and let it rest for 5 minutes before slicing.

Notes

For best results, use full-fat Greek yogurt. Marinate for the full time for optimal flavor penetration. If short on time, 30 minutes is acceptable. Avoid overcrowding the grill for even cooking.
