Ingredients
  

Marinade

  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped Fresh herbs are recommended for best flavor.
  • 1 tablespoon fresh thyme, chopped Fresh herbs are recommended for best flavor.
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Chicken

  • 4 pieces chicken breasts

Instructions
 

Preparation

  • In a large bowl, mix the Greek yogurt, olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
  • Add the chicken breasts to the bowl and coat each piece thoroughly with the marinade.
  • Cover the bowl with plastic wrap or transfer the chicken to a resealable bag, ensuring to remove as much air as possible.
  • Refrigerate for at least 1 hour, or ideally overnight.

Cooking

  • Preheat your grill or oven to medium-high heat (about 375°F).
  • Remove the chicken from the marinade and let the excess drip off.
  • If grilling, cook the chicken on the grill for 6-8 minutes on each side, until the internal temperature reaches 165°F.
  • If baking, place the chicken on a lined baking sheet and bake for 25-30 minutes.
  • Once cooked, let the chicken rest for a few minutes before slicing.

Notes

For optimal flavor, use fresh herbs and pound the chicken to an even thickness before marinating. Allow the chicken to rest after cooking for best results.
