Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour Can substitute with whole wheat or almond flour for variations.
  • 2 tablespoons sugar Adjust sweetness to taste.
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup Greek yogurt Use room temperature for smoother batter.
  • 2 large eggs Eggs should be at room temperature.
  • 1/4 cup milk Can use almond, soy, or regular milk.
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil For cooking pancakes.

Preparation

  • Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • In another bowl, mix the Greek yogurt, eggs, milk, and vanilla extract until smooth.
  • Pour the yogurt mixture into the dry ingredients and gently fold them together until just combined. Let the batter rest for a few minutes.

Cooking

  • Heat a non-stick skillet over medium heat and add a little butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown on the other side.
  • Repeat until all batter is used. Serve warm.
