Ingredients
  

Main Ingredients

  • 2 cups cooked chicken, shredded Use fresh or leftover rotisserie chicken.
  • 1 cup long-grain rice Uncooked rice should be used.
  • 1 can diced green chiles (10 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can cream of chicken soup (10 oz)
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, rice, and diced green chiles.
  • Add in the black beans, cream of chicken soup, and chicken broth.
  • Season with garlic powder, onion powder, salt, and pepper. Stir until well combined.
  • Grease a 9x13 inch baking dish and pour the chicken and rice mixture into it, spreading evenly.
  • Sprinkle shredded cheese on top of the mixture.

Baking

  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Uncover the casserole and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.

Serving

  • Remove the casserole from the oven and let it cool for a few minutes before serving.

Notes
